Baked Chicken Fajita Taquitos Recipe

    These Baked Chicken Fajita Taquitos are small rolls of tortillas that are crisp and tasty. They are stuffed with freshly prepared strips of fajita chicken, peppers, and onions, and then baked to a state of blissful perfection. This delicious Baked chicken fajita taquitos recipe will be ready for you to enjoy as quickly and painlessly as possible once it has been removed from the oven and served to you.

    Ingredients You’ll Need

    Tortillas –

    I used miniature tortillas made of flour. You are free to pick your favorite, or you can even create your own using the recipe for my really simple flour tortillas. Both corn tortillas and tortillas made without gluten can be used successfully.

    Onions –

    Onions, either white or yellow, sliced.

    Chicken –

    The chicken breast is the ideal cut for this recipe; however, you can also use chicken tenders or boneless, skinless thighs.

    Bell Peppers –

    You can use large or little sweet bell peppers of any color, chopped into thin strips. You can also use red, yellow, or orange bell peppers.

    Butter –

    If you want to maintain some level of control over the saltiness of the taquitos, use unsalted butter wherever possible.

    Instructions For Making Chicken Fajita Taquitos

    Get the oven ready.

    Turn the oven up to 400 degrees Fahrenheit. Spread the melted butter in an even layer across the bottom of a baking dish measuring 9 by 13 inches.

    Start preparing the chicken.

    After melting one tablespoon of the butter in a big skillet, add the chicken to the pan after it is melted. Toss the chicken with half of the fajita seasoning, then use the remaining seasoning to season the chicken.

    Cook the chicken for about five minutes, or until the juices run clear and it has a charred appearance but is not completely blackened. Take the chicken out of the pan, and then clean the pan thoroughly.

    Prepare the vegetables.

    In the skillet, melt the two tablespoons of butter that are left over from the previous step. Add the onion and peppers, season with the fajita seasoning that is left over, and continue to simmer for a couple of minutes until the onion and peppers have grown softer and the onion has become translucent.

    Taquitos should be assembled.

    Place a tortilla on a cutting board and lay it out flat. Top the tortilla with some of the chicken fajita mixture and a couple of tablespoons of cheddar cheese.

    Roll the tortilla up as tightly as you can and set it in the baking dish that has been prepared. Continue in this manner with the remaining tortillas. Coat the taquitos with melted butter and set them aside.

    Bake.

    After the oven has been warmed, place the baking dish inside the oven and bake for approximately 15 minutes, or until the tortillas have developed a wonderful golden brown color.

    If after 15 minutes they have not yet turned golden, switch on the broiler and broil them for one to two minutes, watching carefully to ensure that they do not burn.

    Prepared to be served.

    You can serve this with salsa and/or sour cream if you choose.

    Leftovers

    Fridge

    In the event that there are any leftovers, wait for them to reach room temperature before placing them in a container that cannot be opened. They can be stored in the refrigerator for up to four days without losing their delightful flavor.

    That’s another wonderful reason why they work so well as meal prep for the whole week because they can be made in advance. Breakfast that is already prepared, just needs to be rewarmed, and served without any rush!

    Freezer

    Regarding the possibility of freezing the chicken fajita taquitos, you can prepare them in advance, place the uncooked taquitos in a tray that is suitable for freezing with the seam facing down, and set the tray in the freezer for 20 to 40 minutes, until the taquitos have frozen solid.

    The next step is to remove them from the tray, place them in a zipper bag that is suitable for freezing, and then put the bag into the freezer. They can be stored successfully for up to four months.

    When you are ready to use the taquitos, remove them from the container, set them on a baking sheet, and bake them in a preheated oven at 375 degrees Fahrenheit for around 15 to 20 minutes. Serve with the side dish of your choice!
